SEEDLESS GRAPE GALETTEmartim
- 196g unsalted butter
- 1 tablespoon red wine vinegar
- 1/2 glass of cold water
- 333g of flour type 55 or 65
- 1/2 teaspoon salt
- 1/2 tablespoon sugar
- 1 spoonful of vegetable oil
- 200g Vale da Rosa Black Grape
- 100g of sugar
- 1 tablespoon corn starch
- 75g of grape juice
- Salt and lemon juice to taste
For the dough: Start by wrapping the butter with the flour. Then add cold water, red wine vinegar, salt and sugar. Stir all the ingredients very well until you get a uniform and consistent dough. Leave to rest in the refrigerator for 12h.
Filling preparation: In a thread of vegetable oil, take the grapes without seeds to sauté for 3min. Add sugar, cornstarch and grape juice. Add a few drops of lemon, and let it cook until a uniform syrup is obtained. Cut the dough in a circle, fill with the seedless grape syrup and close the galette. Bake in the oven, previously heated, at 210º for 30min. Leave for 30 minutes to decorate with powdered sugar.
